A Taste of the Folk School: All About Bees

This spring, bees take center stage at one of the most beloved creative learning spaces in the country.

From April 26th, 2026, through May 1, 2026, Jeometry™ founder Jennifer York will be teaching alongside fellow bee-lovers and educators at the John C. Campbell Folk School in Brasstown, North Carolina, for a one-of-a-kind immersive experience:

A Taste of the Folk School: All About Bees

This week-long class is a celebration of honey, bees, craft, and community, bringing together food, art, science, and hands-on learning in the spirit the Folk School is known for.

What Is “A Taste of the Folk School: All About Bees”?

This immersive course invites students to explore the world of honeybees from multiple creative and sensory perspectives. Over the course of the week, participants will rotate through four different studios, each offering a unique way to engage with bees and their incredible contributions.

From the hive to the kitchen table, from wax to paper, this class is designed for anyone curious about bees; beekeepers and non-beekeepers alike.

Expect to:

  • Taste and learn from a variety of honey sources

  • Create edible and artistic projects inspired by bees

  • Visit the bee yard, gardens, and orchard

  • Leave with honey, handmade pieces, and a deeper appreciation for pollinators

Meet the Studios & Instructors

Cooking with Megan Lambert
Spice up your cooking with a little honey.

Participants will:

  • Prepare sweet treats like baklava and honeycomb candy

  • Learn how to incorporate honey into savory dishes

  • Sample local meads

  • Explore honey’s versatility beyond the jar

This class highlights creative, approachable ways to cook with honey and deepen your appreciation for its flavor.

Book Arts with Jennifer York
Jeometry™ founder Jennifer York brings together her background in design, storytelling, and beekeeping in this hands-on book arts class.

Participants will:

  • Learn to build a multi-layered pop-up book featuring the honeybee

  • Draw, cut, and stack layers of paper into a 3D scene

  • Use watercolor painting to bring pages to life

  • Create collapsible scenes bound into collaged hard covers

Along the way, Jennifer will also share her knowledge as a South Carolina Journeyman Beekeeper, teaching about Apis mellifera and the vital role honeybees play in our ecosystems.

Bees with Nancy Simpson
The Art & Science of Honey Tasting.

Led by certified honey judge Nancy Simpson, this studio offers a deep dive into honey sensory analysis.

Participants will:

  • Develop their palate like a honey sommelier

  • Understand taste perception and honey flavor profiles

  • Discern the difference between commercial, heat-treated honey and high-quality local varieties

Through guided tastings, students will gain a new appreciation for the complexity and depth of honey.

Candle Making & Beeswax with Deb DeWitt
This hands-on workshop explores the many creative uses of 100% pure beeswax.

Participants will:

  • Render and filter beeswax cappings

  • Craft a luminary bowl with pressed flowers

  • Pour molded candles

  • Make reusable beeswax food wraps

  • Blend scented lotion bars

Perfect for beekeepers, crafters, and anyone curious about working with natural materials.
